More than just a sauce - cooking mole is a kind of royal discipline in Mexican cuisine. We discovered the mole we cook at Central de Abastos - the gigantic and unique market in Oaxaca. Different chile varieties, spices, dried fruits and dark chocolate give this mole the depth of flavor. Preferably with chicken or just plain with fresh tortillas. By the way, in Oaxaca, we were served mole with platano, grilled plantain - DELIGHTFUL.
